Harvested; de-stemmed; 6 hours of maceration, pressed in pneumatic press, temperature-controlled fermentation at 20°C, matured in stainless steel vats for 5 months.
Light green-yellow; hint of passion fruit, scent of papaya; juicy, elegant; mineral and salty notes in the finish.
